2 eggs 🥚 yolks

200gr-butter
white wine-20ml

- I let the mixture cool down, in another small saucepan I melt the butter, finely chop the tarragon and watercress. After the mixture has cooled, add the egg yolks and gradually, with constant stirring, the butter, until a homogeneous mixture.
- After the sauce reaches the desired consistency, I taste it and if necessary add salt or pepper to taste, the last step for the sauce is adding the finely chopped fresh spices.
