Dear friends, today’s recipe that I am going to prepare
is an incredibly tasty dish and if you decide to
impress a loved one with this recipe, you will not go
wrong, enough talk, let’s move on to cooking.

Ingredients

  • Onion 0.050

  • Guanciale 0.150

  • Garlic 0.010

  • Wine 0.050

  • Salt pinch, pepper pinch

  • Parsley 0.030

  • Yolks 2

  • Pecorino 0.070

  • Fresh pasta 0.400

  • Oliv oil 0.030

Directions

  • I start with a wider pan, add a little olive oil and start adding
    the products successively
  • first I start with the finely chopped onion and garlic, sauté for 1 minute
  • then add the diced guanciale and fry for about 4 minutes
  • the next step is to add the wine, let the alcohol
    evaporate, during this time, in a small bowl, I will stir
    the egg yolks, add the pecorino
  • parsley and black pepper, at the same time I have poured water into a
    pot and it is already boiling
  • I add sea salt to the boiling water and add fresh pasta, I use spaghetti, but
    you can use pasta according to your taste and shape
    and boil for 3 minutes
  • and it’s time to assemble the dish, to the guanciale add the mixture with the eggs and the pecorino, stir briefly and add 1 ladleful of pasta water
  • after the pasta is ready, add to the sauce, toss them 4 to 5 times, for serving I will use thin tongs with which I roll up part of the pasta and serve in a pasta dish
  • then grate the pecorino and sprinkle with parsley and a few drizzles of olive oil
